Spinach, Mushroom, and Feta Crustless Quiche

Ingredients:

  • 8 oz. mushrooms
  • 1 clove garlic, minced
  • 10 oz. spinach
  • 4 large eggs
  • 1 cup milk
  • 2 oz. feta cheese
  • 1/4 cup grated Parmesan
  • 1/2 cup shredded mozzarella
  • Salt and pepper to taste
  • Non-stick spray

Directions:

  1. Preheat your oven to 350°F (176°C). Spray a pie dish with non-stick spray.
  2. Slice mushrooms and sauté with minced garlic in a skillet over medium heat until mushrooms are soft and all their moisture has evaporated.
  3. Gradually add spinach to the skillet, allowing it to wilt. Remove from heat and let the mixture cool slightly.
  4. In a medium bowl, whisk together eggs and milk. Stir in feta, Parmesan, and mozzarella. Season with salt and pepper.
  5. Spread the mushroom and spinach mixture into the bottom of the pie dish, then pour the egg and cheese mixture over the vegetables.
  6. Bake for 45 minutes, or until the quiche is golden brown on top and the center is set.
