Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 pound mushrooms, sliced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 4 cups vegetable broth
- 4 cups fresh spinach, chopped
- Salt and pepper to taste
- Fresh cilantro, for garnish
Directions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
