Caramelized Onion Tart with Gruyere

Ingredients:

  • 1 tablespoon olive oil
  • 3 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 prebaked tart shell (9-inch)
  • 1 cup Gruyere cheese, shredded
  • 2 eggs
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until softened and golden brown, about 25 minutes. Stir in sugar and balsamic vinegar, and cook for an additional 5 minutes. Remove from heat.
  2. Preheat oven to 375°F (190°C).
  3. Sprinkle half of the Gruyere cheese over the bottom of the tart shell. Top with caramelized onions.
  4. In a bowl, whisk together eggs, heavy cream, salt, and pepper. Pour this mixture over the onions and sprinkle with the remaining Gruyere cheese.
  5. Bake for 25-30 minutes, or until the custard is set and the top is lightly browned.
  6. Garnish with fresh thyme leaves before serving.
