Ingredients:
- 1 ready-rolled shortcrust pastry
- 8 slices bacon, chopped
- 3 onions, thinly sliced
- 4 eggs
- 1 cup heavy cream
- 1 cup cheddar cheese, grated
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
- Preheat oven to 375°F (190°C).
- Lay the pastry in a 9-inch pie dish, trim the edges, and prick the base with a fork. Line with baking paper and baking beans, then bake for 15 minutes.
- In a pan, cook the bacon over medium heat until crisp. Remove bacon and set aside. In the same pan, add olive oil and caramelise the onions over low heat for 20 minutes.
- In a bowl, whisk together eggs, cream, salt, and pepper.
- Spread the caramelised onions over the cooked pastry base, sprinkle with cooked bacon and grated cheddar.
- Pour the egg mixture over the top. Bake for 25-30 minutes or until set and golden brown.
