Ingredients:
- 1 tablespoon olive oil
- 3 large onions, thinly sliced
- 1 teaspoon sugar
- 1 tablespoon balsamic vinegar
- 1 prebaked tart shell (9-inch)
- 1 cup Gruyere cheese, shredded
- 2 eggs
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Directions:
- Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until softened and golden brown, about 25 minutes. Stir in sugar and balsamic vinegar, and cook for an additional 5 minutes. Remove from heat.
- Preheat oven to 375°F (190°C).
- Sprinkle half of the Gruyere cheese over the bottom of the tart shell. Top with caramelized onions.
- In a bowl, whisk together eggs, heavy cream, salt, and pepper. Pour this mixture over the onions and sprinkle with the remaining Gruyere cheese.
- Bake for 25-30 minutes, or until the custard is set and the top is lightly browned.
